Mini Apple Crisp Pie ~ Vegan Dessert
Ingredients
Pie Crust
  • 1cup nutswalnuts, pecans, almonds, cashews (I like mixing 1/2 and 1/2 of any of these two)
  • 1cup flourpastry flour *I don’t know if gluten free flours will work but you can try
  • 3tablespoons vegan butterwe used the becel, you could use coconut butter, I think it would work
  • 3tablespoons maple syrupuse pure maple syrup to get the best taste
  • 1/4teaspoon saltsea salt is preferable but you can use normal salt
Pie Filling
  • 2medium applesdiced, you could throw whole apples in food processor to chop in tiny pieces
  • 3tablespoons sugarany sugar is fine *apparently date sugar is the healthiest!
  • 1/2small lemonjust squeeze them on your apples to prevent from browning ps. this is not absolutely necessary you can eliminate this if you like
  • 1 teaspoon cinnamon
Pie Crisp Top
  • 1cup oatsrolled or quick is fine
  • 1/3cup vegan butterwe used becel
  • 2tablespoons flour
  • 1/4 cup sugarbrown is best, but you can use white or coconut, but date sugar is the healthiest
  • 1tablespoon cinnamon*you could add a 1/4 of allspice and nutmeg as well or just use 1 tablespoon of apple pie spice
Instructions
  1. Preheat oven to 350 degrees. In a food processor or vitamix (it did work for us but I would blend just the nuts first then add the rest). It only takes a bit of pulsing, and it will clump together and be just like dough.

  3. Press into the mini cupcake pan. I love the silicone, as they pop out so easily. Bake in the oven for 5-10 minutes. Remove from the oven, and let cool while you make the filling and topping.
  4. Peel and core 2 medium size apples. Cut in 1/4 and throw in the food processor…. just pulsing or dice them up small. Put in a bowl and add all your sugar and cinnamon. Set aside
  5. In a bowl put the butter, and dry mix and mix up well with a fork or your hands.
  6. Using a spoon, spoon in a teaspoon of apple pie mixture in your already mini pie crusts. Then add the apple pie “crisp” on the top.
  7. Bake for about another 20 minutes. Wait to cool…and yummy you have the best mini apple crisp pies! You can go over to hot for foods and get the recipe for their caramel topping if you want to add more sweetness! I like them both ways!
