Preheat oven to 350 degrees. In a food processor or vitamix (it did work for us but I would blend just the nuts first then add the rest). It only takes a bit of pulsing, and it will clump together and be just like dough.

Press into the mini cupcake pan. I love the silicone, as they pop out so easily. Bake in the oven for 5-10 minutes. Remove from the oven, and let cool while you make the filling and topping.
Peel and core 2 medium size apples. Cut in 1/4 and throw in the food processor…. just pulsing or dice them up small. Put in a bowl and add all your sugar and cinnamon. Set aside
In a bowl put the butter, and dry mix and mix up well with a fork or your hands.
Using a spoon, spoon in a teaspoon of apple pie mixture in your already mini pie crusts. Then add the apple pie “crisp” on the top.
Bake for about another 20 minutes. Wait to cool…and yummy you have the best mini apple crisp pies! You can go over to hot for foods and get the recipe for their caramel topping if you want to add more sweetness! I like them both ways!
