I know what your thinking.. Dr. Greger again! Well, the How Not to Die cookbook is so great, and I had to share about the experience we had with making this wonderful lasagna… (because its all about the experience).
I think we can all relate to the fact that we all had those comfort foods we liked before we went plant based and Lasagna was definitely at the top of my list. However, this lasagna has no oil and no cow flesh (calling it by its real name of course) and no cow secretions aka milk! So that is a good thing for your health, for the animals and the environment.
I don’t know about you but lately the rage seems to be a “ketogenic diet” eating high fat and meat and being afraid of carbohydrates. This is so sad, as there is so much scientific evidence that this is bad for your health and its not really a sustainable lifestyle. When I was younger, it was called a high-protein diet. I had a HUGE crush on all animal flesh… yep I was a BIG FLESH eater! ugh It seems so surreal now.Yes, we did lose weight on high protein diet but its hard to stay on this lifestyle. I never stayed on it to long and then back to the standard american diet. Check out truth below about low carb diets…..
So this recipe is totally from Dr. Greger’s How Not to Die Recipe Book! Its healthy and tasty. We have been eating pretty clean lately and your palate does change, so your not expecting all the fat and salt.
This lasagna is great in my opinion, BUT if your just starting out plant based you may want to try these out as they are richer and have more fat. If you want to start out healthy or are already in the healthy mode, then this is the lasagna recipe for you. Don’t underestimate it, as this lasagna is full of flavour and is filling.

As with any lasagna there is a bit of work so this is not a quick recipe and takes some time and planning. Below is a picture of our final product!
